Sustainable Dining Operation: Facilities Construction and Design

Whether your company operates out of a new or existing space, there are things that can be done to improve your environmental performance and save money on utility bills.

Here’s what you can do to improve your environmental performance:

  1. Focus on lighting, HVAC, and water heaters. Lighting, air conditioning, and heating can represent a considerable expense for restaurants, particularly those located in hot or cold climates. Choosing compact fluorescent bulbs instead of traditional incandescents, upgrading to a programmable thermostat, and insulating hot water heaters are all simple steps that can lead to significant savings. See EDF’s Innovation Exchange on the Real Estate industry for more resources on how your company can improve the energy efficiency of your kitchen and dining space.
  2. Use energy and water efficient appliances. Follow our Cooking and Refrigeration Equipment best practices to replace ovens, refrigerator-freezers, and dishwashers with more efficient models whenever possible.
  3. Use sustainable materials and design. Whether your get formally certified or simply follow their guidelines, the U.S. Green Building Council provides a wealth of information for greening your building. Their LEED standards promote a whole-building approach to sustainability by recognizing performance in five key areas of human and environmental health: sustainable site development, water savings, energy efficiency, materials selection and indoor environmental quality.
